Go to the administration section of the profile of the user who is intended to moderate some forums
Assign user to the administrators or the moderators group
Select the forums, the user will moderate, and press "Update moderator assignment" button.

As it looks now, it says on a number of categories "Moderated by admin." I would also like it to be my colleague's username behind to me and then I want my username in the other categories in which my name is not visible.

Administators have full access to moderate everything. If you are the owner of the site keep that status for you!

to set up a moderator click on user>Administration> Assign User group.
Once done, you will be presented with a checklist of your categories

We are two administrators in the forum now. But it is just me as moderating the categories I set up when I started the Forum. When I later added new categories as I find no where I can go to determine the categories in which I will moderate and the other administrator.

Where do I go to set who will moderate the categories?

We use this verison PunBB 1.3.4
