When I click on profile, I don't even see my own data on the first page. It just says "private" or something similar all the time. I think that should be changed...

The first page is supposed to be a preview of what other members will see so you can verify your public profile is appearing as you wanted.

Should the labels be in gray color, and the information be black in color?

Also, for entries with the "Unknown" value, is it possible to not display at all? Can an extension do this? Thanks.

Yes, an extension should be able to do that.
