Sure, make a forum where guests are allowed to post replies in a thread you created

That's great;
Will I be able to remove the menu bar in the top, and the information that are only related to a forum, and leave the bare minimum fields showing, to make it look like a guest book.

Sure, just edit main.tpl to what you want.

By the way... 
Isn't it by changing main.tpl will affect the whole of my current punbb forum.
I guess I need to create an other instance of punbb and use it just as a guestbook, that way I can modify the main.tpl and not affecting the original forum.

Yeah, but I thought you were talking about a new forum
You can also create a new page that just gets that one thread.

That what I am planning to do tonight.
An other thought came to my mind:
Is that, I need to add some more input fields when the guest will sign the guestbook like a country field. Is that possible. If so which file do you think I need to change.

You'd probably need to edit post.php to add the fields and viewtopic.php to display them.
