Is it possible to install Punbb, add a Gallery mod and delete the whole forum, and customize it, so you'll kind of have your own portfolio?
If so, How?

if you still want tu use the gallery after deleting the forum, there are lots of files from the forum to keep.
I do not see the goal of such a thing, it would be easier to use an autonomous gallery script if you do not want to use the forum
